I’ve used this sauce to create a pasta dish for 1 🙂
- 2-3 tomatoes
- 1 large red pepper
- 1 clove of garlic
- Splash of oil
- Mixed herbs
- 1tbs of ketchup
- Start by chopping the tomatoes, pepper and garlic into small pieces
- Grab a frying pan and add the oil, turn up the heat adding the chopped garlic
- Then add the chopped tomatoes and peppers to the pan giving a good stir. Keeping the heat high allow the veg to soften for a minute or two, then reduce the heat and leave to simmer for 5 mins
- Stir in a dash of mixed herbs and season to your taste. I’ve added a bit of Worcestershire sauce and marmite for more flavour and colour
- If the mixture doesn’t look like the last picture below add a splash of water to help it become more of a sauce like consistency
- Then mix it into whatever you have chosen, enjoy
